Introduction: A lot of caterers use the same menus over and over. In my industry reptition is king and also very cost effective but at the same time very limiting. I treat every job as a new experience my menus are constantly evolving simply because no two jobs are the same party i can be make Asian hor douerves and another party I am smoking turkeys. it can be stressful at times but it is also very rewarding. the adventure of new clients and the range of different requests really challenges my ability and my knowledge of the culinary arts.
