Pruning is a science and an art. You want to keep the natural structure of the tree and prune it so it looks 'lacey', the air can flow through it, not against it.
I mulch the cuttings and put that back around the tree to keep the weeds down, roots cool, and it decomposes into rich earth to feed the tree, bring in worms and beneficial bacterias.
