All of these arrangements can be performed by quartet; most are available for string trio and a few for string duet. For a mixture of classical, jazz, and rock, I would recommend violin and guitar.

Q. What advice do you have for a customer looking to hire a provider like you?
A. Look for a high-quality ensemble that has a sound system to provide enough volume for loud receptions and outdoor ceremonies. If there is no sound system, the officiant cannot be heard outdoors and everybody will be talking during receptions, which will make it very difficult to hear the string quartet.
