    Chef Carl and his wife Mary, prepared a classy and elegant feast fit for a king and queen for my birthday this past weekend, it was in our home with several friends invited over to share the experience with us. I must say, this was the most breathtaking experience for my husband and I, as well as our friends. It was very unique and the food was to die for. We would highly recommend their services. They were attentive and everything was done just right... I cannot compliment the food enough, I was nervous at first because this was the first time we had done something like this, my concern was how will the food taste? will we all enjoy it? WE ALL WERE THRILLED... excellent job... thanks for making my birthday this year the best I have EVER had... no kidding... I cannot wait to experience this again for another function. We offer you the opportunity to host a truly elegant and distinctive dinner party, and we do all the work—we shop, set up, cook, serve, and even clean up.

We use only seasonal, fresh, wholesome, and when possible, additive-free, organic ingredients to make a true gourmet dining experience that will be remembered. So you'll get exactly what you want, we'll let you design the menu. We will even set the table and bring the flowers.

We will create and serve a 4, 5, 7 or 8-course tasting menu in your kitchen and serve it in your dining room. Each dish may be personally selected by you from our menus, or you may create a signature menu for your special event.

We limit our handcrafted, distinctive dining experiences to parties from two to sixteen, so that each guest and each dish served receives the personal treatment you expect from a true fine dining experience.

On the day of your event, we typically purchase the needed ingredients, so everything we use is as fresh as possible. Nothing ever comes out of a cooler, storage freezer, or is left over from a prior party or restaurant service.

    For my 5th wedding anniversary, I decided to hire a personal chef because my wife was in late pregnancy and we were not going to be able to go out to dinner. I contacted Carl via email, to which he was very responsive. My request was last minute, but Carl was able to accommodate me. He offered sample menus and worked with me to select the multiple courses. On the night of the event, he arrived on time with his assistant. They were extremely pleasant and sociable, but not overbearing in the least. We were able to relax and put our toddler to bed while they prepared the meal. The meal was 8 courses of heaven! I did not know what to expect, but the experience far exceeded my expectations. Although this was a pricey event, I was well worth the investment. My wife was very surprised and has told everyone she knows about our special event. If you are in search of a unique dining experience from the comforts of your own home I definitely recommend Carl and his crew. I would do it again in a heart beat.

    Chef Calle, Mary and Dear Friends:

    Wow....what a wonderful evening! Who could ask for a more perfect dining experience? Great food and wine, exquisite service and wonderful friends to share with, all in the intimate setting of a friends home. Many thanks to Richard and Christina for hosting this beautiful evening and to Chef Calle and Mary for wowing all of our senses! The dishes were beautifully presented, perfectly balanced and really delicious. All seven courses, from the tuna crudo, to duck salad, whole fresh Rockfish roasted in a salt crust, concluding with that marvelous fig tart, were pleasing to the eye and palate.

    We look forward to our next gourmet home dining experience with Baltimore Distinctive Home Dining and all of you!

    Carl made the most amazing dinner. Cold night, roaring fire, beautiful table setting, and good conversation. I felt so spoiled...Tuna crudo course was the best preparation of tuna I'd ever had. The finely cut candied lemon zest was on top and just made each bite incredible! His wife Mary did a great job on the wine pairings. The main pasta course exquisite and light. The praline ice cream remarkable.
    I could go on....but you must try Carl and Mary's service yourself!!!

Q. Describe the most common types of jobs you do for your clients.

A. Our most common jobs are fine dinner parties for groups of good friends who like to spend quality time together but not be faced with selecting someone or a couple from the group to do all or most of the work. Rather than spending time in a busy, noisy restaurant these high quality, usually high income professionals and business owners want uninterrupted time with each other. We so the shopping, the set up, the cooking, the serving and the cleanup. The ingredients and the food are made to order and not only taste good, but look good and are extremely healthy and balanced nutritionally. The best of the best. That is our motto.

Q. What advice do you have for a customer looking to hire a provider like you?

A. Don't focus your search on personal or private chef's that list having worked at numerous fancy restaurants. There may be a very good reason they no longer have those jobs. In home dining is different. To do it right takes special care and attention to detail that cannot be found in even the finest restaurants. It is about using the best ingredients and techniques to create a one of a kind dining experience which is not possible in a restaurant environment.

Q. Why does your work stand out from others who do what you do?

A. We are the Baltimore areas only Private Chef and Personal Chef service specializing in fine, in home dining and small events where super high quality is more important than feeding large numbers of guests. This concept brings fine dining and catering events to a whole new level of excellence.

Q. What do you like most about your job?

A. We get to work with intelligent, high class people with high standards and then we use our expertise and creativity to provide them with a one-of-a-kind and often once-in-a-life-time dining experience. In short "we make good people happy"!

Q. What questions do customers most commonly ask you? What's your answer?

A. #1. QUESTION: What if my kitchen doesn't have all the tools necessary to prepare the meal?

ANSWER: The short answer is we will bring any special tools we will need. Of course, you will need the basics. Stove, oven, refrigerator, sink and the like, but the small tools like food processor, blender, whisks, hand tools, food mill, strainers, chef knives, Gelato maker, ravioli cutters, pasta roller and cutter, etc. we will bring. During our initial meeting we will inspect your kitchen and dining area and note what is needed to prepare the food and make the event a success and then we will bring the needed tools and equipment.

#2. QUESTION: $75.00 to $100.00 a person sounds like a lot. How can hiring you actually save money?
ANSWER: You save money in that you will purchase and serve your own wine, legal beverages and soft drinks which are marked up many times in a restaurant or banquet setting.

And remember, a great deal of work goes into preparing a fine dining experience for up to 12 guests. First, there is the in home meeting and inspection. Second, we plan the menu and determine where to obtain the finest ingredients and organize the meal. Third, we shop for the ingredients the morning of your event so that everything we use is fresh. Then we arrive at your home between 11:00 am. and 3:00 pm. depending the size of your group and the complexity of the menu you have selected. We make the pasta by hand. We make the Gelato and dessert by hand. We spend the afternoon preparing the "mis en place" which is the French word used in the culinary world for the preparation and organization of the many ingredients, seasonings and accompaniments needed to bring the entire meal together promptly and precisely at the chosen time. Then we prepare and serve the meal and clean up the kitchen. An entire day for two people. That's a great deal of work and you receive the very best food and service tailored just for you.


Q. Do you have a favorite story from your work?

A. At our very first dining event the hostess, the Italian born wife of a prestigious cancer surgeon walked into her dining room and stated "I never knew my dining room could look this good". This is a true story.
