Introduction: I am a French native and professional chef with over 20 years of international culinary experience. I recently moved to North Carolina to resume my metier. I learned to cook in my grandparents' cafe in Tours, in the heart of the Loire Valley. For 50 years, Les Tonnelles was the neighborhood restaurant that relied on my grandparents' organic gardens and orchards and on local farms for meats and dairy.
