- How did you get started doing this type of work?
I started cooking when I was 12. I started decorating cakes when my little brother came along when I was 14. Ok that was 35 years ago. I just wanted to be able to do his birthday cakes, so I taught myself how to decorate. I went to work for my cousin, who owned a restaurant and catering company when I was 16. I have been baking and cooking ever since. I graduated from Culinary School in 2001. We opened this location in 2003.
- Describe a recent project you are fond of. How long did it take?
We did a wedding at the Parthenon in Nashville on New Years' Eve two years ago. It was very challenging as we only had about two hours to build a kitchen, bring in all the tables and chairs, build the buffet, set up a full bar, Hors d'oeurves for the cocktail hour, work with a florist, DJ, lighting company, and a full dinner buffet with carving stations. We not only pulled it off, but we were ready ahead of time. I have the best staff in the area! I'd love to show just how good they are.
- What advice would you give a customer looking to hire a provider in your area of work?
Be sure to taste the product first. A lot of people can sculpt cakes, a lot of people produce beautiful food displays. But if they don't taste good you've wasted your money!
