Q. What questions do customers most commonly ask you? What's your answer?
A. Your Menus are very large, do we need all these items? If we drop this and that can we lower the price?
With Grazing Menus, the most popular with weddings and parties, I write menus with a large variety, this keeps your guests moving and exploring the dishes instead of gathering around the "the shrimp", something for every taste and diet, variety is a spice too. Taking one or more items off the menu doesn't reduce the amount of food prepared and served, often increases it; you need a finished amount of food to feed everyone and limiting the menu means making a larger quantity of the items you are serving. Everyone is going to pile up one item, "the shrimp", on their plate. Larger variety, smaller portions, more color and textures make a table look beautiful.
