I recently hired Chef Knight for a fairly large dinner party here in the north Berkeley hills. We totaled eighteen, if my memory serves me.
The menu he prepared looked truly incredible, but to all of our amazement and delight, tasted even better!! Everything came out perfectly on schedule and filled the dining room with aromas the likes of which you would not believe!
Our menu:
Chipotle-corn crab cakes with smoked tomato aioli.
Braised lamb shoulder served on gorgonzola-scallion arepa with roasted jalapeno-mint chimmichurri.
Maine lobster martinis with watercress, avocado, lightly dressed with lime-horseradish and worcestershire.
Duck confit with pear and clove gastrique.
The duck confit was the best I've ever had. Hands down.
To be perfectly honest, I hesitated before writing this, for selfish purposes. You see, I simply don't want to share him!!
