Greta’s Gourmet is a high-growth, community-based catering company. We’ve created our concept based on handcrafted, unique foods that taste great. We sometimes CHOOSE the hard way to do things on purpose, because easy isn’t always better. We are passionate about delivering the best product we can, and changing the way people think about catering, or meat, or Hors d’ouevres, or sandwiches, or banquets, etc… Our mission: Delivering the food experience you deserve, in an environment of fun, passionate professionalism. We achieve this by starting with some fundamental core principles. 1. We make things from scratch, if possible. 2. We come from a culinary background in techniques and principles. 3. We use local ingredients, whenever possible. 4. We NEVER serve something we aren't proud of. 5. We continuously ask ourselves "Can this be better?" 6. We approach our customers with the aim of making them our long term clients and advocates. 7. We hold each other accountable to these principles. I really enjoy meeting with a client, and listening to what they really want the experience of the event to be. Then, we get to write a menu and execution plan that helps to achieve that experience, within their budget! Every day is different for us at work, which helps to makes each clients' experience unique.

- What should the customer know about your pricing (e.g., discounts, fees)?All of our printed menus are available on our website. We consider the menus a starting point, and will write a custom proposal with all costs involved. You will not be suprised by any hidden costs in our invoicing. We line-item price every charge and present that to you from the beginning.
- What is your typical process for working with a new customer?We like to start the process with a meeting either in person, or over the phone, so that we can develop a good understanding of the scope and intent of the event. We will write an individualized menu based on this meeting, and will schedule a tasting for any large wedding or event so that the potential client is confident in their menu.
- What education and/or training do you have that relates to your work?Kevin Mandigo grew up analyzing food. As the son of a world renowned meat scientist, daily meals became excursions into the how’s and why’s of the foods he ate. Those experiences led him to continually explore and investigate food and to focus on raising his own standards throughout his professional career. Kevin has a B.S. in Foodservice and Hospitality Administration from UNL and has worked in the restaurant industry for 28 years. His resume includes: Managing Partner at Granite City Food & Brewery, Manager at Famous Dave’s and General Manager at The Garden Cafe & Bakery. Today, Kevin spends his time as proprietor of Greta’s Gourmet Catering, playing tennis, and spending time with his wife Shalla, a Le Cordon Bleu Executive Chef, and their 8 year old daughter Greta, who is the namesake of their business.
