James has been the chef/caterer at the last 4 - 5 large (20 or so) family Christmas Eve dinners at our house. He cooks ten-rib roasts to perfection, and is creative with his excellent hors d'oeuvres and side dishes. In addition, he understands the feeding of the children at the children's table, as well as serving the table, tending bar and serving hors d'oeuvres. He does it all with a smile and wonderful positive attitude, and everything is pristine by the time he leaves. He makes for a festive and fun party, and I heartily recommend him.

Chef James Reid quickly impressed me with his enthusiasm, communication skills and professionalism during one of his cooking classes on Sauce Making 101. I had the pleasure of attending this three hour class where he demonstrated and evaluated several basic sauces, with precision and perfection! Of particular value to me was Chef Reid’s use of stocks to make simple but delicious sauces and the multitude ways I can use in various, savory dishes! You'll learn a lot from Chef Reid! I heartily endorse him for any teaching role and look forward to taking another class soon!

This past week, our women’s group (consisting of 7 eager cooks) engaged the services of Chef James while he introduced us to the beauty of French cooking. Julia Child would have been impressed with his patience, good humor and knowledge of all things culinary. He was thorough in his explanations and demonstrations and never tired of our on-going and persistent questions. What a brave soul he was to keep an even temperament during the three hours in which we novices made attempts at, “Mastering the Art of French Cooking”. I’d bestow at least 3 Michelin stars and highly recommend him! Merci , Chef James! Pat Schally
