Chef Mark cooked for me and my friends on three occasions, and he did a wonderful job each time. He created his own four-course menus, based on the preferences I gave him. For mains, his stuffed pork Florentine and his blackened fish are winners! For appetizers, he made wonderful creole shrimp canapes and endives with roquefort and pecans. His soups were particularly good: black bean soup with chorizo, and roasted red pepper soup with a touch of gouda cheese. And his specialty dessert is minted cream and fresh berry cornucopias. A great culinary experience, and he is pleasant and very knowledgeable about foods and recipes. I highly recommend him!

We have enjoyed having Mark Dietz of Local Harvest prepare wonderful menus for many different occasions over the past several years. Mark is very easy to work with and is familiar with many different cuisines. We would gladly recommend him. Amy and Bill, Bethesda, MD

Mark served dinner, the theme was Southern Cuisine. Mark carefully chose the ingredients, which were very fresh, prepared a delicious menu that included two appetizers, a first , a second course and a dessert. Everything looked very attractive and tasted delicious and interesting-not too spicy but flavorful. We are piscatorian so the menu included no meat. My opinions are limited to shrimp, catfish and the like. I'm not a dessert person, but have to admit that his cornucopia -phyllo dough shaped like a horn- oozing cream and berries were stunning. My husband had two! Mark is highly personable and can work in small spaces. Highly recommended!

All the dishes were outstanding and left us asking for more. The shrimp stuffed avocado was sumptuous, the cucumber lobster salad so subtle but so full of taste. The black bean soup with chorizo was rich and hearty with just the right amount of spices. As for the stuffed pork Florentine it was mouth-watering. Without a doubt the chef is very experienced. He knows how to creatively combine the highest quality ingredients and spices to bring out the best of every dish and create magic at every meal. I would very highly recommend.

  • What education and/or training do you have that relates to your work?

    Over 30 years in professional kitchens including time working in upscale, fine dining, eateries and down-home family restaurants, embassies, country clubs, and hotels. I attended Le Academie de Cuisine and I've been a Culinary Instructor there and at Job Corps and at DC Central Kitchen.
