- What should the customer know about your pricing (e.g., discounts, fees)?
I do not have a standard pricing system. Each of our guests are unique and as such, I customize our services to meet their needs, as well as their budget.
- What is your typical process for working with a new customer?
My process is to listen. I listen to my guest's needs, ideas and budget so that I can create the best quote possible and experience for them. I do not have set prices or menus as I believe in customization.
- What education and/or training do you have that relates to your work?
I have a diverse background in food, restaurants, sales, marketing, and accounting and finance. I am the Executive Chef & Owner of Restaurant mémoire in Ridgewood, NJ, as well as the Chief Executive Officer of TAF Restaurant & Hospitality Group (a restaurant consulting company) and the Founder and Executive Chef of TAF Catering & Personal Chef Services. Prior to starting my my catering & personal chef services company in 2010, I graduated at the top of the class with a Grand Diploma in Culinary Arts from the prestigious French Culinary Institute in New York City. I've done off-premise catering, private dinner parties, and cooking lessons ever since; and enjoy doing so. But I always wanted to open a restaurant. So after a 5-year search, I opened my first restaurant in Ridgewood, New Jersey, named mémoire, for the memorable dining experiences I create. Shortly after taking over as Executive Chef in June 2014, mémoire received a Very Good rating from the New York Times (the equivalent of 4 out of 5 stars) and has received numerous awards such as Best New Restaurant (Bergen Health & Life Magazine, Ridgewood Award Program) and a Certificate of Excellence from TripAdvisor. I'm a visionary with plans of redefining and elevating the overall dining experience. My culinary background, business acumen and overall passion for the restaurant and hospitality industry are a recipe for success. My high standards and uncompromising quest for perfection is a top priority and is at the forefront of everything I do.
