- What education and/or training do you have that relates to your work?I graduated from Los Angeles Trade Tech with an AA in Culinary Arts and Professional Baking - it is a total of four years of formal training. I worked as a cook and chef at several fine dining restaurants. I opened and a part owner of a critically acclaimed Texas BBQ restaurant and my current project, Phat Birds, has been written up several times in the LA Times and Los Angeles Magazine. I was also a PT instructor at Sur La Table and especially enjoyed doing the kid's food camps during the summer. I thought all cuisines and baking classes offered.
- What types of customers have you worked with?I've worked with all types of customers. We've done corporate events with several hundred guest as well as small intimate parties. We design the program that best meets your needs. We have a full time event planner that can help with all of your event needs.
- Describe a recent project you are fond of. How long did it take?We had a customer that wanted to do a cannibals infused event at their dispensary. I have experience infusing THC in foods and was glad to do it. We made an infused grapeseed oil and use that oil to make an aioli and that was the base for all our dipping sauces. We also used that oil to cook the greens. We also made a canna-butter and used the butter to make biscuits, corn bread and honey butter. The client wanted an infused Nashville Hot Fried Chicken as well so we used the grape seed oil to make the cayenne oil for the chicken. We took our time to Decarboxylate the Cannabis which activated the THC but also eliminated a lot of the funkiness associated with Cannabis. Our client and his customers were very pleased and we have been invited back 3 times to cook at their events.
