I spend hours at the farmers markets selecting the best produce. All my work is inspired by the farm-to-table concept. My menu change continuously following seasonal ingredients because I like to provide healthy and sustainable food to my clients. This way supports also the local and regional food system and improves the vitality of local urban and rural communities in many ways. I work in the kitchen helping all ingredients shine through the use of classical cooking techniques which include using exclusively the king of the Mediterranean-diet style: Italian Extra Virgin Olive Oil. I come from a traditional family in Sicily (Italy) and I grew up appreciating outstanding food made by two grandmothers, incredible cookers! So I love to surprise friends and guests with my fresh food. They are always so surprised to have incredible meals on the table made with few high quality ingredients. Probably this is one of the secrets for making unforgettable food. Also I like to share with them my recipes and explain them how each meal is made.
