- What is your typical process for working with a new customer?We like to begin by talking on the phone or via email to understand the customers needs and wants.
- What education and/or training do you have that relates to your work?Jim Vellano graduated from Le Cordon Bleu in Paris with degrees in both Savory and Pastry. Worked through restaurants in NYC and Palm Beach before landing a job at Per Se in NYC which is where he met Jennifer. After that James became the chef at Bouchon Bakery in NYC and after 5 years with the Thomas Keller Restaurant Group, he decided to begin Maison Prive Chefs with Jen. Jennifer Vellano graduated from Peter Kump's in NYC (now ICE). She interned at Blue Hill NYC, then went on to open Blue Hill at Stone Barns. From there she moved back to NYC and worked at Per Se with Jim Vellano. After her time at Per Se, Jen moved into cooking privately for families in NYC and Greenwich CT. It was during that time that Jen created the idea for Maison Prive Chefs.
