"Unlike the majority of Personal Chefs out there, I have spent over a decade in the trenches of fine dining restaurant kitchens. In fact, out of the recent top 50 restaurants listed by the Tampa Bay Times, I have worked for 5 out of the top 10 Chefs mentioned over the course of the past 7 years. I also worked for the likes of Mario Batali, Todd English, Jean Georges Vongerichten and Laurent Torundel in New York City prior to moving here. I attended the Institute of Culinary Education in New York City. While I can offer modern fine dining cuisine, I am just as comfortable cooking traditional fine dining as well as everyday comfort foods and ethnic foods. I have spend the last few years cooking Japanese cuisine and particularly ramen. Before that I mainly covered American, French and Italian fine dining. I can cater to any dietary restriction and enjoy the challenge of doing so, unlike most restaurant cooks. Please contact me for your personal chef needs as well as private cooking instruction. I truly believe there are no rules in cooking and what truly matters is the end result and the satisfaction it delivers. That might mean I can deliver you a superior meal in the same amount of time if I am cooking for you, or it might mean I can teach you how to get over some of the hurdles of home cooking by showing you how to think outside the box. I use techniques such as sous vide and pressure cooking as well as some modern ingredients, not to try and act like some mad scientist but because they can truly streamline and help to foolproof cooking. "I recently turned 45 and have realized that I need to begin to focus on eating healthier and lighter fare in order to avoid the weight gain and the potential health issues that coincide with life after 40. At a loss for ideas and lacking inspiration, I asked Jeanne to provide me with a few healthy dishes on a weekly basis to begin to replace some of the convenient processed food I was currently relying on as a major part of my diet. She worked with me to come up with a weekly plan in which she provides either a main dish or a side that is interesting and healthy and I would cook something simple like a piece of fish or a side of grains to compliment what she has made for me in a given week. My goal was to always have something interesting and healthy to look forward to eating in addition to a healthy basic. This worked out very well. The greatest thing about her recipes is that she uses the healthiest of ingredients and the food tastes amazing. Never bland, never boring because she has a real knowledge of how to combine ingredients to get the best flavor from her food. Last week she made me a fish stew with red pepper and coconut milk. I made some brown rice to go with it and it was a perfect meal. Delicious exotic and healthy!
