I first favored the Naples Catering/JN Culinary bid because of their pricing but upon performing web research on ALL the other contenders I was even more drawn to JN Culinary for many reasons. First, his clientele's comments were numerous and all favorable. Second, his education (masters) and certifications in the field coupled with his work experience (executive chef) make for an outstanding resume. Third, his web page is very professional containing very valuable info about menus, ideas, as well as pictures of his kitchen. I could tell this person took his business very seriously.
I contacted Paul and gave him an overview ...I was looking to serve 30 people for a birthday party for three different ages (70, 55 and 50)! Did I mention that the 50 yr old is very Italian and the 70 year old didn't want any cake! The food needed to be dropped off, no serving or attendants necessary. Paul was very easy to work with. We came up with an anti pasta appetizer, salad, chicken francaise, veal bolognese, meatballs, whipped potatoes with celery root, braised Brussels sprouts with fennel sausage...for dessert bite sized cheese cake and key lime pie!
Everything was fantastic...I've never had a party where everyone Raved about the food! The moment you smelled the Brussels sprouts (which in general aren't my favorite, but these were awesome) your mouth started watering. Here are some comments (verbatim) from some of our guests.
"The food I had was great! I heard everyone raving about the food, especially the men. Everyone seemed like they were going up for seconds. I would definitely use the caterer if I had a party. If you provide me his name and number, I'll keep it and also pass it on to my friends in the area who are in Naples a lot!"
"The chicken was moist and you could cut it with your fork and it just melted in your mouth. After each bite I just wanted to take another. And the meatballs were fantastic. The flavors all blended in your mouth like heaven. The bread didn't need butter it was so flavorful but not over done! The roasted peppers on the appetizer tray were fabulous too!
"I thought the caterer was good and especially liked his presentation and taste of the [appetizer] and his presentation (very unique) and the taste of his desserts! Since these are my two favorite parts of any meal, they are always MY focus!! "
"It was all great but the Bolognese was over the top."

Need I say anything more??. Oh yes, he needs to bring business cards because many guests wanted them. Your mistake if you pass this guy over!
