    My husband and I were visiting NOLA with a large group for a few days and hosted a private dinner in our vacation rental. Trying to set up an event from across the country was challenging and Wendi was very helpful in planning the menu and answering any questions thrown her way. We had some last minute headcount changes and supplier issues, both of which she handled like a champ! Then there was the food....SO GOOD. It's not often you can get a group of foodies to be unanimously impressed. Anything we couldn't shove in our faces at the dinner table became coveted breakfast fare the next morning. There wasn't a scrap left unclaimed. Wendi, thank you for all of your work and making our dinner a highlight of the trip!

    Working on the order with Wendi was very nice - she did her very best to accommodate our needs. Jenny delivered the food on time and quickly set up the tables. The food was delicious - the faculty and staff were very pleased with everything! We will definitely use Fleur De Lis Catering again.

    I used Wendi to cater my husband's 60th birthday party. She handled everything from the food to arranging rental for tables, chairs, fans, tents and even the Margarita machine. The food was a 10+ and stress-free since Wendi handled everything right down to arranging delivery and pick up for all of the rental items. Our guest raved about the food and a great time was had by all. Wendi always answered my calls and always gave me the answers I needed. We will definitely use Wendi again! Thanks Wendi!!!

    Wendi was great! She worked within our budget, yet still provided delicious food with all the extras we needed (tables, chairs, tent). She was always on time, followed any dietary restrictions we gave her, and even cooked several on camera meals for us. (We had several Thanksgiving dinners in the movie).

    I was the First Assistant Director for an independent feature film in New Orleans in 2009, and Wendi Smith was our caterer. She and Fleur De Lis Foods did an absolutely outstanding job with providing food for our cast and crew! The food was extremely tasty, and there was always lots of variety over the 25 day shoot. I cannot recommend Fleur De Lis Foods highly enough for the wonderful job they did for our project.

Q. What is your typical process for working with a new customer?

A. I ask the customer certain questions to determine exactly what services they're expecting for their budget. Based on the information provided, I offer suggestions or different scenarios of service to help them receive the most value for their dollar.

Q. What education and/or training do you have that relates to your work?

A. I grew up working in my parents' catering business. I have worked in every facet of the bar and restaurant industry from food stands to fine dining. I've worked and have held supervisory positions in kitchens and front of the house throughout my career. I've trained in kitchens preparing several types of cuisine.

Q. Do you have a standard pricing system for your service? If so, please share the details here.

A. I do not have a standard pricing system for my service. I work to base my prices on the customer's budget and needs.

Q. How did you get started doing this type of work?

A. I grew up working in my parent's catering business. I have always been interested in cooking, since a very young age.

Q. What types of customers have you worked with?

A. I have worked with many types of customers, from boxed lunches to full scale weddings.

Q. Describe a recent project you are fond of. How long did it take?

A. I catered an 80th birthday party. They requested BBQ so the actual cooking process took about 17 hours. The delivery and set up took about 30 minutes. The customers were so nice and the "Birthday Girl" was very pleased with her cake.

Q. What advice would you give a customer looking to hire a provider in your area of work?

A. Have a budget in mind but try to have some wiggle room. Let the caterer know if there's any food allergies or special dietary needs. Be open-minded about the menu you want to serve. Please understand that sometimes not all items are available for your event because circumstances beyond our control, shortages due to weather conditions, price increases, etc.

A. What is my maximum budget for this project? How flexible can I be with the date of service? What if any compromises can I make in relation to this project? What is more important, how much I spend or the quality of service for this project?
