Graduated 4th from the French Pastry Academy ( over 5000 applicants) after two years of study with the vice champion of France 1975 ,Bernard Paucellier. -1978/1980 Worked as pastry chef, and on charge of rotisserie at Le Cocq Hardy at Bougival in France. This restaurant was classified by that time as one of the 10 best restaurant in Paris. Served world celebrity, kings, presidents, .... -1980/1983 Started as a sous chef at the pastry branch (entremets) for Fauchon ( place de la Madeleine Paris). After two years was promoted to the position of Rotary Chef. During this time was awarded : 1) Gold medal of the French pastry association. 2) Trophy of the city of Paris from mr Jacques Chirac. (Ex French president) 3) 1 st place of the European pastry contest Charles Proust 82 ( degustation) 4) 2 st place for sugar masterpiece. During this time was working one year as a pastry chef at the Circle St Augustin Paris where serving the French government ,heads of states, Kings, officials, in official visit. Was involved to establish the chocolate Valhrona brand in Fauchon Paris with chef Paul Berton thru differents contests. -1983. Worked as a pastry chef for Gaston Lenotre in the pastry and catering division to establish the branch in Dallas/ Houston Texas. -1984. Worked as a pastry chef at Michel Richard( in Beverly Hills). Catered the party of new jewelry collection for Cartier at the Warner studio with Gaston Lenotre. Was sponsored by the great French chef Jean Delaveine to be member of the club "Les Toques Blanches". -In 1984/1987. Worked as pastry chef at La Serre restaurant in studio city. During this time served special events for Marlon Brando, Jack Nicholson, Robert Redford, Sally field, Steven Spielberg, divers ceo, executives and agents of studios. Did the sugar masterpiece for the premiere event of " The Bride" for Sting and Jennifer Beals for Columbia Pictures. -1987/1989. Pastry chef at the tower club (Martin V Smith) in Oxnard CA, making masterpieces for the inauguration, specials events, and menus for banquets. -1989/2014. Open my pastry shop/restaurant ( Clafoutis) in LA on sunset Plaza. During this time did private parties for the Latin Award for BMI. Served many celebrity weekly, California governor birthday party, catered many events for the Saudi royal family at bell air residence, special events in Berverly hills, Bell air, corporates events in downtown. Close the restaurant after 25 successful years. 2015. Moved to Santa Fe.
