He was late and did not want to complete the cleanup. Blamed it on poor communication except he replied to emails stating he understood. My guests waited an hour past our scheduled serving time for dinner. The presentation of the meal was in tin foil pans (formal wedding). He did not want to set up where the bride had instructed. Gave him his way in order to get food on the table. His attitude was appalling. The food was delicious though. He did cater the rehearsal dinner and was on time. He had a great attitude that evening and the food was great! If communication was poor with me (MOB) then he should have clarified that that time. I made myself accessible. We catered two events, one on Friday night, the other on Saturday night, for this client. As the client admits, the food was delicious both nights. On the second night, after the guests finished eating and my crew and I were packing up and preparing to leave, the bride's mother came up to me and informed me that we were expected to stay until after the music party-dance and then clean up the entire place; she informed me that was what we agreed to in advance. Keep in mind that no one discussed this with us in advance, though we did receive an email with the rules of the venue for the catering. In fact, we were only paid to cater the food, not for the venue clean up. That's what the communication reference above is about. I told the bride's mother, politely, that this was a surprise to us but we would stay and not leave the clean up to the family and guests. . Instead of leaving at 9 pm, we left at midnight. We bussed tables, swept the floor, put chairs on tables, made several trips with trash to the dumpster., and then had the venue manager check off on the clean up, and then we left. We were always polite and professional to the guests, though we were not happy to spend three more hours cleaning after planning to leave at the end of food service. The was not required of us after serving the rehearsal dinner, and having multiple conversations with the bride and her mother on Friday night with no mention of this expectation on Saturday. The brides's family and friends did also stay and help clean up (we didn't not request this) though we did appreciate it. We receive no additional money for what we saw was extra work- the bride and her mother could have told us in advance this was expected but they did not. My attitude was one of surprise, though I did, politely, explain why I was surprised to be asked to stay until the wedding party was over and then clean up- I would have billed them for that- our standards are to be helpful and of service, even when we don't agree with the circumstances. We perform a quality job both night.
Dave did a fabulous job catering our daughter's Texas-Style wedding...his base price is very affordable for just about any size group or event and we were able to add a number of additional sides and meats as well....Everything was delicious, there was plenty of it, the meat-eaters were in BBQ nirvana and the vegetarians had plenty of delicious sides to keep them happy....Dave perfectly adhered to the agreed upon timeframe to serve dinner and is a wonderfully outgoing & engaging presence to boot who clearly loves what he does ...the food was great , there was plenty of it and we had 150+ very happy and full guests as a result. He is also very flexible about menu choices and implied that he's got a lot more delicious cajun-inspired entrees up his culinary sleeve as well....very easy to work with...HIGHLY recommend for ANY occasion and just about any size groupMay 23, 2013

- What should the customer know about your pricing (e.g., discounts, fees)?In general, my pricing is based on what the customer wants and for how many guests, and the effort and expense to produce a tasty result.
- What is your typical process for working with a new customer?I generally ask what they want me to provide and discuss if that can be done; most times it can be though there are always events where it is not possible.
- What education and/or training do you have that relates to your work?Besides direct culinary experience since 1968, I have taken Texas certification course and continue to improve my recipes and techniques with new knowledge. I have won prizes in cooking contests and take food seriously-- from vegetarian to smoked meats to desserts, Mexican, Italian, Cajun, Southern-style dishes, I am continuously learning.
