- How did you get started doing this type of work?
Someone reached out to my wife asking me to prepare a dinner for a banquet creating a menu featuring wagyu steak. They were following my Instagram page and I happened to have posted a family dinner I made, but the presentation appeared as a fancy dinner. I didn’t have the experience with this cut of steak or the type of banquet. Over a month I worked on the 4 course menu I would use and this was how I was able to get started.
- Describe a recent project you are fond of. How long did it take?
I was asked to prepare a dinner for a group of three people. One of the guests is vegan needed a Caribbean vegan menu. I was able to make a menu that worked as a hybrid menu for vegan as well. The main item was a paella which was made as mushroom paella and I was able to add smoked meat for guests that were not vegan. The menu took about 3 days to prepare as far as testing out my recipes with a vegan conversion.
- What advice would you give a customer looking to hire a provider in your area of work?
This is an opportunity for you to have an event in your space and personalized for you and your guests. Ask the questions and make sure you are comfortable as the food and drinks are are a huge part of the experience. You also want to have someone you can trust and will enhance the experience for you and your guests.
