Thank you Chef Jim for your amazing, delicious food! We had so much left over and every single guests took little bit of everything home for their dinner! :P He arrived on time, set up beautifully and came back when the party was over to tear down and take everything back, which was a HUGE help for me!! Everyone LOVED the short rib and the lettuce wraps! They were AMAZINGLY DELICIOUS! Thank you again for everything you've done.

Chef Jim provided a full-service catering for Northridge Prep's Career Day this past Thursday (March 9, 2017). He created an amazing menu for us that featured classic lasagna with meat sauce; sliced Italian bread with butter; house salad with a choice of three dressings; beverages of lemonade (traditional and strawberry), cold cans of pop, and water; and for dessert dark chocolate mousse profiteroles. We requested a half pan of gluten-free lasagna for those who may have needed that, but Chef Jim made a whole pan at no extra charge. He also called me a week or so before the event to say that he wanted to upgrade the bread and butter to garlic bread and to make another filling (strawberry cheesecake) for the profiteroles to offer people a choice--all for no extra charge! I, of course, said yes! He requested to arrive the day before the event to deliver serving ware and to get a feel for the arrangement of the buffet and dining tables. Chef Jim met with the head of maintenance and, after looking at the arrangement of tables, he even made a suggestion to change the way the buffet was set up--for the better! He arrived with his two assistants in ample time the morning of the luncheon, working in a calm and professional matter. The arrangement of the lunch was perfectly spaced and picture-perfect, and the look of the food was way above our expectations, and we have high expectations! Chef Jim used beautiful, slanted glass bowls for the layered salads, chaffing dishes for the lasagna (which very much kept the pasta warm throughout from the first person being served to the 135th person), baskets for the garlic bread, etc. There were varying heights to display the food, and appropriate utensils to serve each component. Everything was neat and clean, polished and shined. The food looked so elegant, and it was very much noticed and appreciated by our high school students! In addition to the great attention placed on the food and its appearance, Chef Jim also researched our school colors and brought burgundy-colored plates and burgundy and gold-colored napkins. The forks and knives were grouped together and wrapped in a burgundy napkin with a gold tie for each person to take. I couldn't help but notice that even the plastic forks and knives were the kind of plastic that looks like real silver. Every detail was planned and executed to a tee! Of course, taste is everything, and the taste of Chef Jim's meal made for a lasting impression. I was approached by many adults--and teenagers, too--inquiring who this new caterer is (this was the first time we hired Chef Jim to cater for us) and how we have to have him for our events from now on. The head of admissions said that the lasagna tasted like it came from a five-star restaurant! In fact, he outright ordered me to try the lasagna. I tried the gluten-free version, and it was everything you expect lasagna to be--cheesy goodness layered in tender pasta with a rich, meaty tomato sauce with notes of garlic, onion, and herbs. I also tried both profiteroles (Chef Jim made some extra) and wow! I could tell that they were fresh-made, as they were as light, airy, and delicate with generous, rich filling. The compliments just poured in, and I know that they will keep coming for a long time. The lunch was the conclusion of the Career Day for the students, and what a way to end! I offered Chef Jim assistance in cleaning up, but he said that he and his staff had it covered. He was a pleasure to work with, and I look forward to contacting him again for future events. We were all so pleased! Thank you, Chef Jim!!!
