Introduction: I'm new to the in home cooking scene. I really wanted to stretch my legs and branch out into a new culinary world. The hustle and bustle of a busy kitchen can be exciting, but I really wanted to take on a new challange. With over 25 years of experience cooking at well known establishments such as Anthony's, El Gaucho, Bon Appétit, The Inn at Semiahmoo and Overlake Golf and Country Club, I have trained many cooks. What would be better than learning from a seasoned chef who has lived his life submerged in the culinary underbelly? I have lived and breathed food for the majority of my existance...I have experienced a life that many people would consider a little unorthodox, maybe a little crude...I have bumped elbows with some of the best swash bucklers you can imagine...But my experiences have shaped me into the person I am today. I am a product of my environment. If you know the restaurant business, then you understand. I have cooked foods from all over the world, I have cooked for the richest of the rich and I have loved every minute of it.
I can teach anyone basic cooking fundamentals like knife handling, grilling, roasting, braising, sauté, sauces, stocks and soups. I can also teach you how to use seasonal ingredients to make homemade puree's, pickled vegetables, salad dressings and salsas. I have extensive experience cooking cuisines including Latin, American, Italian, Indian, Asian, French and barbeque. I specialize in comfort foods, soups and sauces, so if you like those foods that comfort the soul, I'm your chef! If you are trying to transition into a healthier lifestyle, I can certainly help with that as well. I am also well versed in Vegetarian and Vegan cooking and can show you some tricks to be animal friendly. Do you have allergies? I can definitely show you some ways to cook your favorite foods, while staying clear of those harmful allergens.
I am also ServSafe certified, so I can teach you the propper ways to handle your product from store to plate. I can teach you how to protect yourself from food born illnesse and how to properly cook, cool and store your foods. I am simply a well rounded Culinarian, so let me know if I can be of assistance.
