Introduction: I am passionate about “making healthy tasteful,” by using fresh, seasonal ingredients purchased from local farmers' markets. I aim to reduce fats, while enhancing flavors. I choose organic greens, and local poultry and beef whenever possible. I enjoy the opportunity to create. Fifteen years ago, I began a professional career via the apprenticeship program of Wolfgang Puck in Seattle. My skills have given me the chance to work at many prestigious establishments around the States including Melisse, Nobu and also American Orient Express, which is a luxurious excursion train exploring vibrant metropolitan centers and national parks across North America. I like to take this array of experiences to create a novel event for each customer. Currently I enjoy creating wine-tasting dinners, private events, interactive chef dinners and cooking classes for all ages.

Brian has come into my classroom three times to make Mac and Cheese for my students. The first time he came in I was concerned about how could he keep the students focused and interested in his cooking. He was excellent. He attended class wearing his chef jacket and brought his knives. Once Brian had started to prepare the mac and cheese, he took time to explain to the students the 5 main sauces. He continually fielded questions from the students. The questions ranged from "What is the strangest food you have ever prepared?" to "How much do you make?" Brian was able to keep their interest especially when he showed them how he chopped food. He showed the students the various knives that he uses when preparing food. Brian finished his presentation by serving the students a generous helping of Mac and Cheese. On his last visit, Brian was challenged to prepare his dish without using gluten. Brian was able to do this and still provide a delicious meal. Brian is a very knowledgeable chef. He has an easy going personality that makes your experience enjoyable. The pride he shows in his craft is inspiring.

Brian hosted a supper club meal, and everything was amazingly delicious. The food kept coming, from appetizers to main courses to dessert. It was all amazing! There were a lot of people and he seemed calm and collected throughout. I would hire Brian for any event in a minute.
