- Describe a recent project you are fond of. How long did it take?
I recently catered a wedding for 100 guests. It was under extreme circumstances as the kitchen needed to be completely rented and set up outside, behind the home, where the wedding was being held, but also as it was an old house, the electricity fluctuated throughout the day and night, adding an enormous challenge to an already stressful situation. But the food came out on time and was plentiful and delicious, as well as beautifully presented. The bride and groom were ecstatic.
- What advice would you give a customer looking to hire a provider in your area of work?
There's always a measure of trust in hiring a chefs. Because of travel distances, it's not often possible for me to prepare a tasting menu or even do a site visit. But I've been in business for four years, and I've tackled some complicated menus in tiny kitchens (including an outdoor rental kitchen for a wedding!), so I can pretty much handle any situation. As to menu tasting, the testimonials on my website can assure any new clients that the gourmet meal I prepare will be of the highest four-star restaurant quality.
