What is your specialty or signature dish? or What do you most like to cook? I always have trouble with this one because I have a passion for cooking (and eating) all types of foods and cuisines. My military career blessed me with a unique opportunity to sample and explore all sorts of international foods and I have been stationed and lived all across this great nation from mu childhood in New England through the midwest, Hawaii and the west coast, to my current home here in Colorado. I love seafood (especially lobster and scallops), German cuisine, and sushi ... but continue to explore and enjoy cooking foods from all around this county and world. It truly is a lifelong journey! Serving high quality, fresh, flavorful and nutritious meals, and being creative with flavor profiles and food/ingredient combinations. Pairing wines and/or beers with each course of a multi-course plated meal or specialized tasting menu.

We had a simply wonderful New Years Eve dinner with friends provided by Fly Boys, to the point where we said we want a repeat of this every year! First, Rob was wonderful to work with prior to the event, offering us as much input into the menu as we wished. In our case, we made just a couple small changes to his suggestions, and he took them completely in stride. Rob and Paul showed up completely on time and got to work preparing our meal. We had a cocktail hour while they cooked, and had fun chatting with them, asking them questions and generally interrupting their work! The meal: outstanding! 2 appetizers that we were completely devouring. The prosciutto-wrapped asparagus was SO good! And they had PLENTY for our group (and even extras). A wonderful warm, hearty soup with homemade croutons was next, perfect for a cold night. Then the main course, duck with several sides (potatoes and butternut squash, glazed carrots, brussels sprouts and bacon!), my plate was CLEAN when they got it back. Finally, dessert. I am not a creme brûlée person normally, and I was licking my dish. Such a perfect top crust, and the custard was so delicate and tasty! Another awesome note - they provided amazing wine pairings within a price range we supplied them, and they were wonderful selections! The guys also, amazingly, cleaned up EVERYTHING before leaving. This may have been just as important, as we were free to enjoy our evening and ring in the new year. They told us about their very cool initiative to help veterans find a second career in cooking, and told us about their passion for that and food. I wish they could cook for us every night, thanks guys!!!

We had a great experience with Chef Paul of Fly Boys Catering. There was a snowstorm the day before, but still he showed up in plenty of time and gave our party of 6 a wonderful meal. He was really pleasant to have around and worked around any inadequacies in the kitchen of our rental. The food was a delicious--couldn't have been better--and we're so grateful for the special and fun night for our family.

Rob and his assistant Paul put on a great dinner and event for a group of 10 business school classmates and their spouses. It was held outdoors at a big table on our porch. The food was excellent and the menu Rob proposed turned out to be ideal for the group and the setting (outside on an early summer evening). Rob also handled all the wine, pairing the appropriate wine for each of the meal's four courses ...and he did that while providing the wine at cost, including some great wines and discounted prices. We were also grateful for the professional manner in which Rob and Paul handled the event, including impressive chef's uniforms and especially providing a description of courses before each one was served. That helped to make it a really special dinner and overall evening. They were also flexible on timing, subtly checking in at various points during the evening. And they did a really solid cleanup job ... it was great not to have to spend the traditional hour or two after the party to get the house back into shape. Rob and Paul will be our "go to" guys/Fly boys in the future.

Private dinner parties and catering jobs are usually priced based on a combination of total head count (i.e. how much food) and menu (quality and cost of food). Whether we are serving individually plated meals (private dinner party) or catered buffet (drop-off or full service), Fly Boys strives to cook and serve exceptionally high quality meals at an affordable price.
What education and/or training do you have that relates to your work?
Both chefs are active members of the American Culinary Federation - Colorado Chefs Association and continue to hone their culinary skills through continuing education and practical experience.
What types of customers have you worked with?
Fly Boys specializes in private dinner parties for up to 25-30 guests, 4-5 course meals expertly paired with wines and/or beer, and small to medium sized catered events for corporate and private clients.
