They carefully removed the old granite, but seemed a bit puzzled about how to install the new Boos butcherblock island top. There were very specific instructions from Boos on how to secure the top: Drilling pilot holes and specifically sized screws with washers. None of that happened. I ended up removing the bugle head screws they used and re-mounted the top according to specifications.
