We could not have been more pleased with the dinner Colin put together for our 12 person wedding. He took the time to come meet with us beforehand to discuss the menu options; made recommendations and collaborated with us until it was just what we wanted, and was flexible with our last minute changes. He arrived early with all of the necessary equipment. He prepared all of the food from scratch and was more than friendly as he interacted with everyone - despite the fact he was simultaneously (and perfectly) timing up multiple dishes all to be laid out at intervals we worked out beforehand. He came dressed professionally in a chef's uniform, actively sought any direction he needed, then was able to operate entirely self-sufficiently in a completely new kitchen with a questionable grill situation and our 2 massive puppies keeping him locked in the prep space. The server he brought with him was professionally dressed and composed and was highly responsive to our party's needs. They completely handled cleanup, and managed to meticulously clean our nearly 100 year old wedding china under the overly-scrutinizing glare of the mother/grandmother-inlaws. In addition to his general professionalism and endearing demeanor, the food was fresh, flavorful, and perfectly cooked - simply delicious. Appetizers - (Finger foods on serving platters) Mini Crab Cakes - tartar/cocktail sauce Mini Meat Balls - marinara sauce Charcuterie Platter - meat, cheese, olives, peppers Veggie Tray Dinner - (Family Style) Rolls with Butter Garden Salad Grilled Asparagus Mediterranean Grain Salad - Citrus Herb Vinaigrette Citrus Terragon Kebab Chicken Whole Beef Tenderloin - dry rubbed and grilled, sliced to serve We couldn't recommend Colin more highly.

Colin was absolutely wonderful to work with and the food was outstanding-- I would say the most tender and delicious steak I've ever had, which is quite an accomplishment when you're preparing steak for almost 20 people. The sides he prepared of mac and cheese, roasted brussel sprouts, herb roasted potatoes and creamed spinach and kale were absolutely delicious, not to mention the phenomenal hors d'oeuvres of crab stuffed mushrooms and scallops with pancetta & caramelized onion drizzled with petit Syrah syrup. Colin was friendly, incredibly helpful, uber professional and took care of every detail. He perfectly balanced helping us host a more formal dinner party while making our guests feel at home. We can't wait to come up with another reason to have him come back and cook for us again.
