Introduction: I am very particular where I buy my food. Using only the best products available. As an example consider our Prime Rib. I use nothing less then choice graded meat. Others say that it is slow roasted and doesn't matter. I believe it matters greatly in flavor and tenderness! To watch my guests sit down to eat. They might be in a bad mood or having a bad day. Then when their food is served and watch their whole disposition change with each bite. To put a smile on a person"s face from just eating great food... that's my passion!

Chef Bail provided the Douglas Dutchers Base Ball Club with an entree of roasted chicken for a Base Ball Festival which we hosted in Douglas Michigan. He not only prepared the entree. but he delivered it to a Base Ball Field area, in a public park. The meal was hot when delivered , and was kept heated for a extended time. These were hungry and weary Ball Players, and their families who were feed, and to this day, they are still talking about how tasty and juicy the chicken was, and how impressed they were that the chicken was still warm. the taste was excellent. The food was delivered on time, and the quality of the food was excellent. Nothing could have been done any different. Thus, Chef Bail was "on his Game" in Base Ball terms, and it could not have been done any differently. I would recommend the Hambone Cafe and Chef Bail to anyone asking about the experience with the Hambone Cafe and Chef Bail. If there is a category above excellent, then Chef Bail and the food were way above anything expected. My rating is way above outstanding !!!!! Chef Dan not only catered for us, he donated the food and the service! This was for our Survivor brunch at the 2014 Allegan County Lakeshore Relay for Life event. The food was delicious and his time was much appreciated!

  • How did you get started doing this type of work?

    I have been in the food industry for over 20 years and started at 15 years old as a baker and then kept going into other positions. Wasn't long and I was in love. Not only passionate about the profession, but I excelled in restaurant operations, also.

  • What advice would you give a customer looking to hire a provider in your area of work?

    Find out if they are food safety certified. Food safety has to be number one priority with so many factors involved these days. From distribution, handling, preparation and then to the consumer.

  • What questions should customers think through before talking to professionals about their project?

    I wish my customers knew what strict practices are concerning food safety we have. Our standards are higher then those expected by state and federal.
