We had an unforgettable experience with Chef Jimmy for my moms 70th birthday celebration aboard a boat cruise. From the start, he brought professionalism, calm confidence, and exceptional organization, which immediately put us at ease in what was a complex, moving venue.He managed every detail (planning, coordination, and preparation) thoughtfully tailoring the experience around my moms favorite dishes to make the celebration feel deeply personal. Amidst the challenges of cooking and serving on a moving boat, he executed everything flawlessly, from setup and grilling to serving and cleanup, allowing us to be fully present and enjoy every moment stress-free.What truly set him apart was how seamlessly he supported the entire flow of the event, not just the delicious food. He helped pace the evening, anticipated needs before we even asked, and ensured everything unfolded smoothly onboard. Whether lighting candles, serving cake, or stepping in at just the right moment, he was always there making sure every detail came together perfectly.The food was outstanding (watermelon salad Mexican street cord, carne asada steak, and tres leches cake to name just a few). But, it was his adaptability, care, and attention to detail in such a demanding environment that made the experience extraordinary. He also connected warmly with our guests, and everyone on board was genuinely impressed.This celebration simply wouldnt have been the same without him. Thank you Chef Jimmy and see you again soon!

Our corporate event was on a chartered boat, maybe 25 people. Despite the limitations of entertaining on a boat, Jimmy provided an EXCELLENT course of appetizers and buffet-style entrees for our party. Everything was hot (unless it was supposed to be cold), fresh, and truly delicious. And definitely more than enough for our group. He even proactively planned for those with dietary restrictions; I would highly recommend The Hosting Table.
