Pricing $15 per person 1 main choice 1 side choice 1 salad choice 1 dessert choice $20 per person 1 main choices 2 side choices 1 soup or salad choices 1 dessert choices $25 per person 2 main choices 3 side choices 1 soup or salad choices 1 dessert choices 1 appetizer choice $7-10 per person for 2 choices of appetizers customized to the menu Prices include disposable chafing dishes and delivery. 25% service fee for buffet service, 35% service fee each for sit down dinner and circulating tray service or add 10% service fee to add circulating tray service to sit down dinner service. There may be a travel fee for locations farther than 50 miles from Chehalis WA. Prices are subject to local taxes. 20% non refundable deposit required to book the date I can also create a menu just for you, I'm very flexible and experienced in all types of cuisine. CATERING MENU Soup/Salad Choices Vichyssoise – classic french potato leek soup, cream based. French Onion – onions slow cooked in white wine & butter in homemade chicken stock. Chopped Salad – spring mix, red peppers, jicima, mushrooms & scallions w/choice of homemade dressing. Caesar Salad – chopped romaine with parmesan cheese, homemade croutons & my famous Caesar dressing. Entrée Choices Beef Bourguignon – Slow cooked beef w/red wine and aromatics. Swiss Steak – Slow cooked steak with tomatoes, red peppers & onions. Chianti Braised Short Ribs – Classic short Ribs slow cooked in Chianti wine** Prime Rib – Roasted in the oven to desired temperature ** Chicken Marsala – Chicken breast in a classic mushroom Marsala sauce. Lemon Chicken – Peruvian inspired dish of chicken with onions in an aji amarillo lemon sauce. Can be made from mild to very spicy. Butter Chicken – Chicken dish inspired by Indian tikki masala sauce, rich tomato cream sauce with fragrant Indian spices. Can be made from mild to very spicy. Herb Roasted Chicken – Classic roasted chicken. Braised Pork Spareribs – served with an apricot glaze ** Stuffed Pork chops – Pork chops stuffed with a cornbread dressing and served with a pan gravy. Seafood Medley – Fresh seafood (seasonally available) in a white wine sauce.** Lobster Macaroni & Cheese – Tender chinks of lobster and pasta in a gourmet cheese sauce. ** Stuffed Portobello Mushrooms – Portobello mushrooms stuffed with a mushroom stuffing. Zucchini Parmesan – Breaded zucchini baked in a marinara sauce with parmesan cheese. Always listen to exactly what they want and make sure your on the same page. Even a small miscommunication can create a huge problem.
- What education and/or training do you have that relates to your work?
I owned and operated a small, family run restaurant in Chehalis and we were well known for our exceptional food, always made from scratch. When the economy turned, catering gave me the flexibility to cook what I love without the huge overhead of a restaurant.
