- What should the customer know about your pricing (e.g., discounts, fees)?
I have a set price for buttercream filled cakes, those with mousse fillings and those with fresh fruit fillings. Some decorating styles may have an up charge on the per person cost, like rolled fondant , Fondant bows or ribbons and so forth. Gum paste flowers are a per piece cost. These are hand made flowers that can be airbrushed to the shades or colors of choice. All hand made flowers are paid for separate from the cake and accessories. These flowers can take weeks to months to make.
- What is your typical process for working with a new customer?
Make sure I have the date open. If another client has put a deposit on a date while a quote is out, I have to retract the offer. I take only one order on any given day. See what the client wants, make suggestions, combine their ideas, answer any questions they may have. Set up a tasting. If the client decides to use my services set up an appointment to solidify the order and receive a non refundable deposit of 25%. 2 - 3 weeks prior to the event finalize all details and take final payment. The cake is delivered and set up 1 - 2 hours prior to guest arrival. Any pillars, plates, or accessories rented are to be returned clean and in good condition, otherwise the accessory deposit (separate from cake deposit) is not refunded.
- What education and/or training do you have that relates to your work?
I have an Associates of Science Degree in Culinary Arts. I am ServSafe Certified through May of 2019. I have been making pastry and wedding cakes professionally since 1981. I have experience and work with all mediums of decorating. All of my work is from scratch. No cake mixes.
