- How did you get started doing this type of work?
Learned from my Grandmother and my Mom! Dad showed me Pancakes, Eggs and waffles when I was about 8 years old.... and the rest was history. Got a job at McDonalds.... Then moved up to a coffee house that sold sandwiches, salads, deserts, and some Hot Entrees.... Then to a Privately owned restaurant that specialized in Asian Fusion fine dining. During this time the owners also opened a high end martini bar, where I was put in charge of creating a finger foods menu for the bar!.... From here I landed a position working with and next to Wolfgang Puck, and became Lead Chef of the South Coast Plaza location in Costa Mesa. After this I got a little burnt out on cooking and became a banquet server for a 5 star catering company. From time to time I would help out the kitchen too, once my culinary background was revealed to the head chef..... This is where I learned all my tricks, and Do's and Don'ts of catering.... And now I'm the Head Chef of a private members only dining club, where I have made my home! And that's my journey to becoming the Chef I am today!
