Introduction: I believe in creating the food most companies now days use pre made options you would be amazed at what can be pulled out of a box now days. I was trained by old school chefs on how to make breads from scratch there is not bread whiting or preservatives no mold sprays I just make it fresh in the morning and that taste cannot be replicated by boxed foods same goes for our desserts and the food we by the least processed most local i can find. And that doesn't have to cost more people charge more for it but I believe that should be standard. I am willing to work harder and longer to make sure you have the best food possible. That is the way I was raised on my parents farm, that is what the chefs I worked under believed, and that is what I give to my customers Just before the end when things are the busiest and you see how happy the food is making the guests ( least favorite is cleaning up when everyone leaves , still haven't found a way around that :)

    Ask lots of questions, make sure you are comparing similar products, just because they both say buffet doesn't mean they are equally valued products. Make sure you choose a catering company that is licensed and insured.
