I have worked at such places as Sheraton Bal Harbour, Naples registry resort, University of Miami, and Mardi Gras Casino. My catering experience includes menu planning, event coordinating, and staffing for Vizcaya Historical Museum, Vitas Medical Systems, Canard Cruise line, North Broward Prepatory School, Bank United, Solomon Smith Barney Financial, and The Fed-Ex Orange bowl committee, providing all aspects of event setup. Cuinn was an honor to work with in his time here at Mardi Gras Casino and Resort. As Chef de Cuisine of the French Quarter restaurant he brought an incredible energy and selflessness to the team. He went out of his way to make fresh soups for the concessions stands, saving me over $20,000 a year. His knowledge and leadership skills are greatly missed here. I have no doubt that he will excel in any future endeavors.
