Introduction: Blue collar to Black tie and back !
I have been in the food service industry for over 15 yrs, and what I have noticed is the huge gap in the culinary world between the blue collar community and the corporate community.Everyone wants a great meal,and to feel special and catered to.My goal is not to bring the prices of a black tie event and a blue collar event closer, but to bring the food quality and services closer to one another.I believe that a great five star meal can be served on a paper plate just as well as a crystal plate! In my kitchen I strive for nothing less than "great food and service for everyone" without exception.
