I've had plenty of inspiration to draw from as a chef. My mom was born in Spain, and from her, I learned how to make paella and tapas before they became fashionable. From my father's Italian heritage, I learned about homemade pasta, braised meats and panettone.
My signature is my empanadas. These pastry wraps are often filled with a fragrant blend of meats and spices. In trying to recreate the empanadas of my youth, I have made the preparation into a gourmet trip in which the traditional recipes, such as Criollas (beef, onions, herbs and spices), pave the way to the non-traditional such as shredded chicken, spinach and feta cheese, ricotta, sun-dried tomatoes, basil and mozzarella. The more exotic combinations include Canadian bacon, blue cheese and walnuts, Hawaiian (ham, cheese and pineapple), Lebanese (lemon-marinated beef and Mid East traditional seasoning) gingered sweet potatoes and cheddar, and the latest introduction: empanadas for breakfast: eggs, cheese and bacon (or sausages), smoked salmon, cream cheese and red onions or the vegetarian with egg, cheese and mixed vegetables.
