It's all Food Service Mgmt.101. There are basic time tested formulas that we all use for food cost, labor %, etc...

I eat out a lot. Keep myself abreast of the culinary trends that might interest my customers.

I fell in love with the restaurant business when I was 16 and washing dishes at the local pizza parlor.
