- How did you get started doing this type of work?
I didn't decide to get into cooking. Cooking chose me when I was a little fella!
- What types of customers have you worked with?
I prepare mostly 3-5 course meals, but have been known to provide 8 course meals. I love'em all!
- Describe a recent project you are fond of. How long did it take?
I most recently did a 50th birthday party for a client. We had an inferior kitchen, no real setup space, tables that were not in good shape, were not paid according to the contract and the function started late (the food was ready though!). We had to slow the warm-up of the food, make a make shift prep area, cooked at a higher temp at the inferior kitchen, but when it was all said and done, the food was the hit of the party. The compliment from the staff at the location was awesome. They all said that our food was by far the best food that they had EVER had catered there. And we traveled from Michigan to Illinois to do it.
