Introduction: I am a bar consultant, bar manager and bartender. I have been doing bar/restaurant consulting out of Angel Fire and Santa Fe recently. My most recent project has been for George R.R. Martin, owner of the Jean Cocteau Theatre, and author of the Game of Thrones novels. Prior to that, my last position was bar manager at a new local steakhouse in which I had created a beer and cocktail menu along with designing the bar from the ground up. I was able to stay within the theme/concept by being able to have total control of design and creation of the bar and its menu. I have created successful cocktail menus and entire bar designs from the ground up. I have created an initial inventory according to various themes owners wanted implemented and have succeeded in organizing food and wine pairings along with the finer points of serving such dishes. I am familiar with most beers, liqueurs, cordials, spirits, wines and cocktails.
