Authentic Mexican tacos are catered to your location, special event, or salon de fiestas. USDA chuck roast beef is slowly braised over an open fire and reduced to perfection using only the freshest ingredients that are of top quality. They are served on a lightly toasted corn tortilla that's gluten free. Condiments include freshly chopped red onions, cilantro, salsa, and limes. Option to have ORGANIC and GMO free Grass fed beef for your party. Delicious Spanish rice with garlic, tomatoes, and unions as well as refried or whole pinto beans are also optional. All services are done via OPEN AIR or under a canopy served al fresco libre unless the location is indoors. All done buffet style. Try my delicious tacos once, and you'll come back for some more! Q. Describe the most common types of jobs you do for your clients.

A. Open air vending for special events such as sports games, weddings, sweet 16's, parties, festivals, etc.....

Q. What advice do you have for a customer looking to hire a provider like you?

A. Prepare for more foot traffic, because once people try my product they will keep coming back again and again. Being new in the industry doesn't change the fact that I have a solid product.

Q. If you were a customer, what do you wish you knew about your trade? Any inside secrets to share?

A. The tortillas are cooked and often left in a steamer. when this happens they get soggy. I do not do this and I keep the tortillas in an old fashioned container. I go one step further by crisping the tortillas on one side with light oil to withstand the juices that the meat has. most other places just overlap a soggy tortilla with another one, resulting in the same problem. I also do not overfill the tortilla so that you may enjoy all flavors without having it fall on your lap. Serving is also done on a hot dog holder instead of a plate to keep the tortillas slightly folded during presentation.

Q. Why does your work stand out from others who do what you do?

A. My tacos are unique in flavor, taste, and presentation. The ingredients I use are top quality and I have mastered the technique of braising to bring out the full flavor of the meats I use.

Q. What do you like most about your job?

A. I like being outside and talking to people. The party atmosphere, energy, and good times, gives me great joy in producing a product that people enjoy. There is truly something spiritual about what I do and how it feels to be able to give to the people.

Q. What questions do customers most commonly ask you? What's your answer?

A. Where did you learn this recipe? Handed down from family over a time of 200 years.

Q. Do you have a favorite story from your work?

A. at a baseball game of hamburgers , hot dogs, chile, and sno cones, my tacos were a hit! I had people tell me they will just try one. The same people came back two or sometimes three times! several elderly men said it was the most delicious taco they ever had in their life! They went and told all their friends and told everyone they said, "come try these tacos they are delicious!" I was bombarded by people shortly after and sold out!

Q. What do you wish customers knew about you or your profession?

A. The joy and the humbleness it brings one to create something that people love.

Q. How did you decide to get in your line of work?

A. family, motivation, and talent.

A. Baseball game at UNLV. SOLD OUT!

Q. Do you do any sort of continuing education to stay up on the latest developments in your field?

A. research in the suppliers that are GMO free, ORGANIC, and local to improve economy and industry.

Q. What are the latest developments in your field? Are there any exciting things coming in the next few years or decade that will change your line of business?

A. The ability to synchronize solar power to make me more portable and sustainable in any open air venue. As well as new devices for HOT and COLD holding to keep foods fresher longer indoors or out.
