Very down to earth, usually talking or working with a world class Chef, their ego is extremely important and must be stroked. Chef Josh on the other hand will talk, inform, and listen.

Josh is one of the hardest working, most inspiring people I have ever had the pleasure of working with over the course of my career. He doesn't just care about the job but about his people.
