- What is your typical process for working with a new customer?
I begin by making initial contact with the customer and find out a little more about what they are looking for, casual or high-end, multi-course or passed apps, etc. Then if the customer has something specific in mind for the menu, I can work from there, otherwise I will draw up some thoughts of my own, working off of their tastes and develop a customized menu for review. Once a decision is made, I can begin your made to order menu.
- What education and/or training do you have that relates to your work?
I graduated The Pennsylvania Institute of Culinary Arts in 2003 with an Associates Degree. After moving back to Toledo I worked around town and in 2007 became the Executive Chef of "Fifi's Tidbits & Spirits", a Toledo institution for many years. I moved to the Mississippi Gulf Coast after leaving Fifi's, and opened a large casual dining restaurant for a group of investors on the coast. Once established, I set out on my own and successfully ran a personal and private chef business for about a year, until family needs brought me back to Toledo. Now that the market has improved and the demand is there, I strive to provide my services to private customers again, this time in Northwest Ohio. I am ServSafe Certified and have a Food and Wine Pairing Certification from the Culinary Institute of America as well.
