Claudia is magic. She is many things...chef, teacher, healer. She listened to my desires of changes I wanted to make in the way my family and I eat. She came up with menus that were relatively easy and yet made vegan eating delicious for my whole family. I learn a LOT about how to be creative and conscious with nourishing my body.

Earlier in 2021, we won a dinner for 6 prepared by Chef Claudia. I was familiar with Chef Claudia's, organic, vegetarian, seasonal cuisine and was excited to have our guest share in the experience. We agreed on a Venezuelan inspired vegetarian feast. None of the participants were vegan but we were all open to the new experience. Claudia came to our house prepared, the rice and black beans were pre-soaked, driving up the healthy qualities, Cashew Crema, two variations, were waiting to be served. The bread for the evening would be Arepa, a traditional Venezuelan masa based pastry. Claudia had us pitch in and help form the Arepa, char and oven bake the bread. Was a fun experience for those who were hands on. The full menu included Arepa, black beans, coconut festive rice, simple coleslaw, tomatoes and Swiss chard and an avocados side. Each hand decorated with edible flowers to enhance the visual experience. We capped the evening with Claudia dining with us and sharing stories of her Venezuelan culture. Every plate had its own flavors and each of us savored the new cuisine. No we have not all converted to vegetarians but we are including more plant based dishes in our menus.
