The food that I make is most at home in cast iron or bubbling inside the belly of a dutch oven. It is warm, soothing and multilayered and balanced above all. I lean on both the rustic quality of Mediterranean tradition where ingredients are highlighted seasonally at the peak of their flavor and combined simply: salt, acid and olive oil to retain a purity of flavor, as well as the deep, unctuous quality of Indian and Middle-Eastern cuisine, slow braises, intricate spice mixtures, cooking low and slow, transforming ingredients through time and technique to a stew or a curry that is so much more than the sum of its parts. I am happy to create anything you can dream up!
