FAQs
- How did you get started doing this type of work?
I first was offered an opportunity to own a restaurant and nightclub by the owner of an establishment I used to frequent. I was managing a men's clothing store in the same mall We had become good friends when he decided he was retiring(there was no family). I had my doubts but he pointed out that most of the clientele I knew, and many of them I had brought there. I love people, the industry and I'm very good at it. That's when I ran into Chef John Beals. The conversation, oddly enough, started because I overheard him talking about salad dressing! He was so excited and animated as he was describing a dressing that he had created. As I listened to him, at first, I thought this guy was out of his mind! He was talking about art and putting his soul into his food. The more I listened, the more intrigued I became. I felt a fire ignite inside of me that I had not felt in quite some time. It reminded me of a quote by Anita Roddick, "Passion persuades." John has a passion for his craft unlike anyone I have ever come across. Since it takes a certain kind of crazy to understand this brand of craziness. John wasn't just talking about food, he was talking about a vision that reaches far beyond the food. He spoke of getting involved with the community, giving back to charities, creating jobs, boosting the local economy, and having a great time doing it! John reminded me about something that I had forgotten---that art isn't a mirror that reflects the world, it is the hammer used to shape it!
