I really hate leaving this review, but I need to be 100% honest. My group of 7 and I were celebrating my birthday at the well-known Invisible House in Joshua Tree. I hired Chef Lan for the meals- dinner and breakfast. To be honest, my reservations about his professionalism started during our first phone call, but the price was right and his menu appeared eclectic, which I was initially excited about. There is far to much to detail here, but the summary of our exchange before the services is this: 1) He could not recall the amount I deposited, the amount I have left to pay, or where he kept any notes on payment 2) He changed his phone number the week before my event and didn’t notify me, I had to call multiple numbers before finally reaching him 3) He did not realize that my event was the next day, and even remarked “thank god you called me” 4) He kept asking if I was married/making remarks about my “husband being lucky that I have good taste” which I found very inappropriate, but I laughed it off as him being cheeky, albeit, unprofessional. Now let’s discuss the dinner. Food was 3/5 stars. I hired him for Caesar Salad, Filet Mignon, Lobster, Scalloped Potatoes, Sautéed Brussel Sprouts, and Sweet Potato Pie. First, he showed up late. Then, he informs me that his assistant didn’t pack the Caesar Salad. Disappointing, but I was willing to overlook this one mishap. Continuing on, Dinner took him about 3 hours to prepare, he cussed the entire time, and enlisted the help of my mom (who was supposed to be relaxing). The Brussel Sprouts were not sautéed, but boiled to the point of mushiness. One of the lobsters that was served to my guest was literally just a shell. No meat was inside. This was the turning point for us, from here things started to go downhill. After the meal, the chef approached me and said that he “saw we had a birthday cake, so didn’t feel like we needed the sweet potato pie”. I’m sorry, but what we do or don’t need isn’t a part of the agreement. I paid for dessert, and expected dessert. After this, my group felt very let down, specifically my 80 year old grandmother who was looking forward to the dessert all day. To top it off, he didn’t clean 60% of the dishes he used, leaving us to clean. Now let’s tackle the breakfast. He shows up on time, which is positive, but continues to talk horribly about the kitchen stove, stating that the electric stove and oven “were bullsh*t”. The menu was Hash Potatoes, fruity pebbles French toast, butter pecan waffles, mimosas, chicken strips, and shrimp and grits. All the food was ice cold, as he did not bring any warming trays. Unfortunately, he did not make the butter pecan waffles. This was a decision he made on his own, without asking me first (similar to the pie situation). The other food was missing taste, depth, and showcased his overall lack of technical skill. Of all the cussing, tardiness, enlisting my guests to assist, disparaging the kitchen, and general unprofessionalism, the single worst thing was that he “jokingly” called my friend an alcoholic. For context, my friend was standing by the champagne and drinking the mimosas when he said “this is what alcoholics do”. I did not hear this interaction. However, this chef decided to say again “Your alcoholic friend” while talking with me, which I quickly shut down saying “that’s not an okay thing to say”. He appeared surprised that I shut that down, and then said “oh no, we were joking about that”. This is not a subject anyone should joke about. Either way, this was a birthday celebration where consumption of alcohol is assumed..come on! He did clean the dishes after breakfast, but was making a point of it the whole time. He kept repeating “See, I’m cleaning the dishes” as if that wasn’t the set expectation upon his hire. The only reason I’m giving 2 stars and not 1 is because the dinner was average. I unfortunately cannot recommend this person. I wish I hadn’t paid upfront for his services.

Details: Special occasion (birthday, anniversary, etc.) • 6 - 10 guests • Dinner • Dessert • Premium (high end ingredients) • Dessert • Cold beverages (alcoholic) • American - formal • Meal prepared onsite • Only once • My home, venue, etc.
