Introduction: Han Ashley is a personal chef with more than 25 years of cooking experience and is the founder and executive chef of The Epicurean, a catering and restaurant business in Waco, Texas. A graduate of Loma Linda University, she was trained in healthy cooking at the Weimar Institute of Health and Education. There, she learned to cook without oil, butter, sugar, salt, and animal products. Then she added valuable food industry business skills through working with extended family members who own thriving restaurants in California, working with many fine chefs to hone her skills. Her approach to healthy cooking is informed as much by her experience as a mother of two active and healthy children, as it is by her experience as a professional chef. Using her professional training, she has developed her own recipes for a variety of cuisines, from vegetarian, vegan, raw and classic gourmet meals to on-the-go snacks; nutritious, healthy-living dishes; and food that appeals to all ages, including her own kids. Han says, "I really believe my love and passion for delicious food is in my genetic makeup since my Vietnamese relatives either own restaurants, manage them or have other roles within the food industry. It encompasses the lives of the people around me. My education and training as a chef honed my interest into a niche, a focus on enjoying food not merely as sustenance but also as a healthy family ritual that can nourish and heal both body and soul." Unlike quick-fix health and weight-loss programs that so often stress doing without, Han's approach focuses on comfort foods from 16 countries, with familiar flavors that resonate home. Wow! I had the pleasure of enjoying Han's cooking on Saturday night. Truly the most decadent & healthy meal I've ever experienced. The nutrient dense - vegan meal was diverse in color, texture and flavor. Her style is creative and organized. Lucky for me she cooks in Austin on the weekends! Thanks Han.

Han is an exemplary chef who offered confidence inspiring and easily-to-follow instructions on how to create the most delicious culinary creations my family has ever experienced. As life-long vegetarians, it has been difficult to find savory and flavorful recipes.
