    Learning from Chef Rachel has transformed the way I eat and cook for my family. Taking classes from her has impacted every meal I make, even if I'm not using one of her amazing recipes. Throughout the class she imparted tidbits of wisdom that she has gained from her years of living of being a healthy eater. I recommend her courses to anyone with a desire to improve their health, their cooking, or if they have food sensitivities. You'll love it!

    Working With Rachel Was Such A pleasure. She always made class fun, interesting and and packed with great food. She really showed you how easy it could be to be a chef in the kitchen. The fact that everything she prepared was organic And Fresh Helped U to see how Attainable good eating Really is. She should have her own Organic cooking show on the Food Network.... That's where Miss Rachel really belongs.

    It's because of Rachel that I changed the way that I cook and eat. I was already on my way to a healthier lifestyle when I took both of Rachel's five-week courses at Southwest Institute of Healing Arts: Whole Foods Cuisine I and II, in addition to singleton courses on various cooking themes. It was in these classes that I learned to cook ahead and keep my kitchen stocked with healthy, whole foods at all times. I have gone on to show others techniques that I learned from her. I continue to cook from The Garden of Eating and The Ice Dream Cookbooks and to use the skills I acquired in her classes three years ago. Finally, the community of people that has grown out of Rachel's classes is phenomenal.

    Chef Rachel is a genius when it comes to meal planning and prep in the kitchen. She has inspired me so much with her healthy (clean and green) food tips. She is professional and takes a personal interest in her students. She radiates positivity and instills confidence while teaching how to prepare and love cooking healthful food. I've enjoyed several private lessons with Rachel and hope to schedule more soon. She is amazing - so worth the investment!

    I was a student apprentice with Rachel in 2008. Rachel was the most inspiring and knowledgable nutrition coach I had ever met. I was so excited to meet her and I immediately wanted to follow in her footsteps. I started out in her classes learning recipes and kitchen skills. She taught us knife safety, how to use a vitamix, food safety and proper preparation and storage of meats. She also took us shopping and educated us on her selections. I then became an apprentice to her personal chef training program. I went on to have my own small personal chef service called Urban Vitality. I still hear Rachel in my head telling me not to graze while in the kitchen cooking. I hear her telling me to stand facing the cutting board centered and grounded. All of her food preparation tips I still use today, even as I cook for my family. I could go on and on about how Rachel inspired me. She is an excellent healthy chef and very educational teacher. I highly recommend her services.

    Rachel Albert made consistently outstanding use of hours scheduled. She came well prepared every time. What exceeded this performance was her extensive knowledge of nutrition and whole food cooking as she greatly helped her students to become better aware of the benefit they and their family members could derive from the newly acquired knowledge. I observed this as one of her students and volunteers over the course of more than two years.

    I attended a cooking class at the Desert Botanical Gardens. It was so much fun. Not only was the food great tasting and easy to make, Chef Rachel kept passing out little nuggets of cooking wisdom all during class. looking forward to the next class with her!

    I cannot express how amazing it is to learn from Chef Rachel. She is creative, passionate and extremely knowledgeable. She not only teaches you how to cook but how to store, clean and all sorts of other tips that you may have never even thought about in order to make it easy! She is a true educator and I am realizing after writing this review that I need to have another class with her soon!

I am a voracious reader. I read cookbooks, nutrition books, magazines, and blogs. I regularly test recipes from cookbooks that I review and I watch to see what other people in the food/health/cooking industry are doing to make healthy, delicious and beautiful food.

How did you get started doing this type of work?
I grew up on processed, packaged foods, and soda. As a result, I suffered from hypoglycemia, constipation, acne, PMS, and depression, and I developed a weight problem in my early teens. Ongoing health issues, along with food sensitivities, led me to discover the nutritious world of whole foods and a produce and protein-rich diet. I learned to cook with natural ingredients and without wheat, dairy, corn, or refined sugar. I am now the culinary tour guide for others that I always wanted for myself. I wanted to share what I learned with others because it made such a difference in my life and because I love to work and play with food.
What types of customers have you worked with?
Group classes in locations around the valley, in home cooking parties, private one on one and small group cooking classes, lunch and learn classes for businesses, presentations to groups that want to learn more about healthy cooking and eating, work with people who are motivated by a health concern to change their diets.
Describe a recent project you are fond of. How long did it take?
I recently went in to a senior living community to do a healthy cooking demonstration and luncheon. The woman who hired me wanted to bring people in from the surrounding area. She created a press release and flyer and promoted the event. She was thrilled with the number of RSVPs, with the audience participation, and with the food and my presentation. My class had the best attendance of any of their events. She was happy to give me a referral and to be a reference for me.
What advice would you give a customer looking to hire a provider in your area of work?
Read about the chef's background and experience. Does the person look healthy? Do you want to look like him or her? Does s/he offer what you are looking for? If you want to learn how to be lean, trim, and energetic, hire a cooking instructor and chef who has these attributes. If you have health challenges, hire someone skilled in preparing the kinds of foods and meals you are looking for.
What questions should customers think through before talking to professionals about their project?
I wish people knew how much time and energy goes into planning, shopping, packing, prepping, setting up, and cleaning up for a cooking class, cooking party, demonstration, or cooking day. There is so much behind the scenes time involved.
