I had envisioned a very special party for 56 guests and wanted everything perfect. I interviewed 3 different companies with a special plan in mind. Chef Paul Mandalou was the only one, of the top ten rated caterers, that was willing to work with me. I wanted my party to feed people during the entire 4 hours without putting them on a schedule. One caterer submitted a beautiful presentation but it was something that you would see at a wedding with stations of different food. All food would be put out at the same time and cocktail hour was limited to one hour max before the entrÃ©e was served. This is not what I envisioned. The other guy had a nice presentation too but, once again, I would be limited to so much time for cocktails, appetizers, entrÃ©e and dessert. This was not what I had envisioned. I also wanted to sample some of the things that I wanted on the menu and the other 2 companies said they would do so but they were not very happy about this request. Chef Paul put together some amazing things for me to try 2 weeks after I contacted him. He came to my home to do so unlike the other 2 companies where I had to go to their facility. Not only was the sampled food fabulous but he was also willing to tweek a certain appetizer to my liking. I wound up getting 12 appetizers, a fabulous entrÃ©e with grilled vegetables and 3 desserts. Chef Paul is Greek so he made me 2 Greek dishes that were so good I will have to keep him on retainer just so I can get more. It is now 2 weeks after the party and my guests are still talking about it. Everyone stayed during the 4 hour time span, which is a very good sign that things are good, and the party continued into the wee hours. Everyone is still raving about the food and how personable Chef Paul was and his staff. I had 2 waiters and a Mixologist that he recommended and they would all hard working, friendly, on time and great with the clean up. Chef Paul may not have a pretty presentation like other companies but his food and service far exceed any other caterer I have used in the past. His presentation of everything is beautiful and he gives a 100 percent. He was present the whole time and did not make a lot of things in advance, like a lot of companies do, so everything was fresh and made in my home. My guests are telling me that this was the best party they have ever been to. If it were not for Chef Paul, I doubt that people would be saying this. People are telling me it was the party of the year. Would I hire Chef Paul again? Yes, without a doubt. He will be my special chef for life and I cannot wait to throw another party that he will cater. If you do not hire him, you are a fool ten fold. If you want pretty presentations and mediocre food, then don't hire him. If you want a party where the caterer tells you how it will work, then don't hire him. If you want fabulous food that people will rave about with gorgeous presentations, fabulous staff and a willingness to work with you, then Chef Paul is your man. I know I will never hire anyone else. Together we pulled off the best party I have ever thrown and I know this would never have happened if I had not hired him. If you want to call me and speak to me in person regarding a recommendation, I am more than willing to do so. Chef Paul has my permission to give out my home number upon request. Many thanks again to Chef Paul and his wonderful staff for making my special event spectacular.

Absolutely World Class! Staff paid more attention to the needs and desires of our wedding guests than I have received at 5-Star restaurants. Hot food was hot and cold food was cold. Quality of the meal items and presentation of the serving line was perfect. All food taken by our guests was eaten. A true sign of quality meals. Chef Paul worked with us for two months of planning, developing menus, and helping us have a memorable wedding reception.

Paul and his team were there to serve us and our guests at my husbands 70th Birthday party with a smile and a more than can do attitude. From our first meeting with Paul and then a sampling of his delicious food, we knew from the start we were on our way to a successful party. His professionalism and communications were always evident as we worked our way through the menu and headcount. The day of the event they were prompt to arrive and right on track with the food and beverage service. Our party was great and our guests were so impressed with the dinner. A total successful evening.

Every event is unique.I work with the client to stay within their budget while leaving no stone unturned to provide them with our best food and service.
What is your typical process for working with a new customer?
I send the client sample menus.They select the items off of the menus they want I then review the items and sometimes make suggestions to complete the menu.I then send them a quote based on the items and service they would like.
What education and/or training do you have that relates to your work?
My father was a professional Chef .I attended and was trained at the California Culinary Academy in San Francisco.I was best in class I have worked in professional kitchens for over 40 years. I have managed professional kitchens for over 26 years as head Chef.I was the Executive Chef for a busy catering company for 9 years.
